Rice bowl with canned tuna, avocado, and soft-boiled egg. Boil the ungodly amount of short-grain rice, a few eggs, and you’re all set for the next few days. Any time you feel hungry, just take your rice from the fridge, and sprinkle other ingredients on top. Add some soy sauce, and you have the best lazy meal you can get. Takes 2 minutes to prepare after you boil the rice, and it’s extremely nutritious. I don’t know how exactly healthy it is, but eating it makes me feel like the fittest guy ever.
For me, it’s an offensive struggle meal, meaning I will probably cook this during my active attempts to get out of the rot. It’s my primary counter for self-hate, to force my confused body to feel healthy and treat myself when every inner voice tells me to just eat shit & go to sleep.
PRISON NOODLES (as they were called by one guy I used to know)
INGRIDIENTS:
-Cheap instant noodles
-Lays chips (Jalapeno x Cheese flavor)
-Salt/Pepper to taste
COOKING:
1) Boil the noodles, pour majority of the water out (4 teaspoons ish). Preserve the flavouring packet, add it later on top.
2) Take the chips, open the bag and proceed to CRUSH the chips inside until they are these small centimetre long mini triangles, like fried onion in a burger.
3) Add on top of the mixed noodles with its flavour packet. Mix it and serve!
EDIT:
A special version exists where you can also add canned tuna to this whole thing! Just add it before throwing in the chips and mix it beforehand! (Pour the oil or whatever your tuna is stored in beforehand fully out!)
There’s two quintessential struggle meals for me that I made all the dang time when I was in my College Years:
- Rice with a fried egg, chopped up hotdog, and soy sauce. Sometimes green onion for a treat.
-Pasta (I prefer rigatoni) with jarred tomato sauce, a lil cheese, and spinach
Neither ever failed me but I understand that sometimes even the amount of cooking they require seems like too much. I tended to defer to Trader Joes frozen meals on such days lol
Struggle meal? microwavable rice with those curry packets (chana masala hell yeah), canned soup, or an entire box of Kraft deluxe. I also will eat JUST tortellini, the pre-packaged kind you can buy. Also, can't go wrong with rice and beans and frozen veggies.
